Quick Lamb Soup
Bean Lamb Shawarma Soup
Here is another great recipe. My son’s violin teacher shared it with us.
Don’t let the list of ingredients scare you, most of them are just spices.
Its a less than 1 hour recipe, even when I make a double batch.

Bean Lamb Shawarma Soup
1 lb ground Lamb
2 garlic cloves, minced
1 onion, finely chopped
2 teaspoons cumin
2 teaspoons coriander
2 teaspoons paprika
1 teaspoon cardamon (optional)
¼ teaspoon cinnamon
¼ teaspoons cayenne pepper
<½ teaspoon black pepper
1 teaspoon salt
2 Tablespoons tomato paste or tomato sauce (optional)
1 cup carrots, sliced
1 ½ to 2 16 oz cans chickpeas or any bean, drained and rinsed
14 oz can crushed tomatoes or 2 cups chopped tomatoes
3 cups lamb or other broth or stock
4 packed cups spinach, chopped unless small leaves
Garnishes-optional
Yogurt or sour cream
Chopped fresh cilantro
Brown lamb in pan on stove adding garlic and onion. Add spices. Cook for 1 minute, then add tomato paste if using, stir. Add carrots, chickpeas/beans, tomatoes and broth. Stir, bring to boil, reduce heat, simmer covered. Cook for about 10 minutes until carrot is soft. Add spinach, stir, it will wilt. Can serve with garnishes.
