Here is a a favorite recipe of mine that has your whole grains, veggies and lean protein all in one dish!
Gingered Lamb Stir Fry
Cutting up strips of meat can be time consuming, but this Stir Fry sauce is the best with lamb!
¼ cup soy sauce
1 Tablespoon dry sherry or any white wine (optional)
2 teaspoons cornstarch or tapioca flour
½ teaspoon ground ginger
1 pound lamb cut into ¼” wide strips (from any cut)
2 Tablespoons oil (grapeseed, olive)
2 garlics cloves minced
2 cups broccoli, cauliflower (or other veggie, be creative)
1 large sweet red pepper cut ¼” wide strips or other veggie, Beans etc or use a bag of frozen stir fry veggies
1 cup brown rice or pasta-cooked
Mix soy sauce, sherry, corn starch, and ginger. Stir in meat, set aside. Heat 1 Tablespoon oil in big skillet on moderate high heat. Add veggies and garlic, sauté for 4-7 minutes, remove to bowl. Add 1 Tablespoon oil to pan, cook meat til no longer pink. Add to Veggies. Serve over rice or pasta.
If you have your Thanksgiving meal all planned out, nice work! Try this recipe another day.
Happy Thanksgiving from the Halburs!
