TIPS
-Lamb can be substituted for beef in pretty much any recipe
-Lamb chops can be cooked just like pork chops
-Just Grilling plain lamb chops is simple
-It is difficult for me to grill with the kids so I almost always adapt grill recipes and broil them in the oven instead
-Any chops (shoulder, loin, rib, arm) can be used interchangeably in recipes or steaks for chops and vice vera. Steaks or Chops (it doesn’t matter)
-Steaks are barely tougher than chops,
-Steaks can be a lot larger than chops-plan accordingly in recipes when substituting one for the other (roughly 2-3 chops equals 1 steak)
-Any cut of meat can be cut up into cube size pieces for cubed/stew recipes, or strips for stir fry
-A number of lamb recipes ask for different spices, if you don’t have it, omit it. The recipes usually turn out pretty good with a few minor missing ingredients
-We love to get 15 pounds of ground lamb each year mixed with pork sausage spices to use instead of pork sausage in recipes
-Recipes for roasts and leg of lamb can be interchanged; a leg of lamb is a roast
-Many lamb recipes have time consuming chutneys, and sauces, very tasty, but the recipe can often be made without them
-We LOVE chops & steaks so we have some legs and shoulders cut into steaks or chops 1” thick…more quick meals!
