Effortless Cocoa Lamb Chops

Need some chocolate for Valentines day? Don't want to wait at a busy restaurant for a meal? Make this effortless recipe instead, enjoy some peaceful time around your table with your loved ones.

My five year old, Hattie, made this for the 4-H Foods Revue. So simple, seriously! Lamb takes some amazing add ins and amplifies them to perfection. That is one of the reasons Jamie, one of my customers, and I prefer lamb over other meats-the flavors it brings out are incredible!

Hattie received best in class for these lamb chops made with Halbur's Heavenly Hill Lamb, the judge stating they were "The best lamb chops she had ever eaten, so tender."

Spiced Hot Cocoa Lamb Chops

8 Halbur's Heavenly Hill Pastured Lamb Chops
¼ cup Cocoa
1 Tablespoon Salt
½ teaspoon Red Pepper Flakes
1/8 teaspoon Ground Cloves
1 ½ teaspoons Sugar

Combine all ingredients except chops in a food processor, grind into a fine powder. Rub the chops with the powder and place in the refrigerator for at least 4 hours or overnight. Broil or grill for 10-12 minutes each side for well done or minimum of 145 degrees.

Chocolate & Maple Glazed Lamb LolliChops

4 Halbur’s Heavenly Hill Pastured Rib Lamb Chops or any Lamb Chop
2 cloves chopped Garlic
1 teaspoon Lime Juice
½ teaspoon Chilli Flakes
1 1/2 teaspoons Cocoa Powder
1 Tablespoon grape seed oil
1 teaspoon Oregano or 1/3 teaspoon dried Oregano
1/2 teaspoon Black Pepper
2 Tablespoons Maple Syrup

In a small bowl mix garlic, lime juice, chilli flakes, cocoa powder, oil, oregano, black pepper, and maple syrup. Rub this mixture into the lamb chops, and marinate for a couple of hours. Broil or grill for 10-12 minutes each side for well done or minimum of 145 degrees.

Cocoa-Rubbed Lamb Chops with Gremolata

8 Halbur’s Heavenly Hill Pastured Frenched or Rib Lamb Chops or any Lamb Chop
2 teaspoons Salt
1 Tablespoon Cocoa Powder
1 Tablespoon Brown Sugar
2 teaspoons Paprika
1 teaspoon ground Cumin
1 teaspoon Allspice
1 teaspoon ground Black Pepper
2 Tablespoons finely chopped
fresh flat-leaf Parsley
1 Tablespoon Lemon zest
1 clove Garlic, minced

Season lamb with 2 tsp. salt, and let sit for 5 minutes.
In a bowl, combine the cocoa powder, sugar, paprika, cumin, allspice, and 1 tsp. pepper.
Sprinkle the spice mixture all over the meat, lightly patting onto the meat to adhere.
Broil chops for 10-12 minutes each side for well done or minimum of 145 degrees.
Meanwhile, prepare the gremolata by combining the parsley, zest,
and garlic in a medium bowl. Season to taste with additional salt.
Sprinkle chops with gremolata.
